We thoroughly enjoy these vegetarian burgers over a bed of greens with sliced avocado, onion and tomato.

Add a side of homemade French fries and you’re set!

Sunflower Burgers Ingredients:

1 cup brown rice
2 cups water
Pinch sea salt
2 cups raw sunflower seeds
1-2 cloves fresh garlic
1/2 teaspoon dried Italian seasoning
1/2 teaspoon ground cumin
1/2 teaspoon Herbamare (optional)
1 small carrot coarsely chopped
1 small handful fresh cilantro OR parsley
Coconut oil for cooking

Sunflower Burgers preparations directions:

Place the rice into a small pot with a tight fitting lid, add the water and sea salt, cover, and bring to a boil. Reduce the heat to a low simmer and cook for 40 minutes. Remove from the heat and let stand for at least 20 minutes to cool.

In a food processor, process the sunflower seeds, garlic, thyme, oregano, cumin, and Herbamare if using, there until finely ground. Add the carrot and cilantro and process a few more times. Add the rice and pulse to combine all of the ingredients. Be sure not to over process the mixture or it will get very gooey.

Form the mixture into patties. The uncooked patties can be stored in a glass container in between pieces of waxed paper in the refrigerator for up to a week.

When you’re ready to cook, heat a skillet over medium heat and add about 1 tablespoon of coconut oil. Add the burgers and cook on both sides for 3 to 5 minutes.
